Water 400ml
Mirin 40 ml

CHASU MARINATE
Used (Ajitama Egg) Marinate
Soy sauce 100ml
Sugar 30 gr

TARE
(Soak overnight)
Water 250 ml
konbu(seaweed) 7.5 gr
dried sardine 10 gr
bonito(katsuobushi) 10 gr
siitake mushroom 5 gr
- combine -
(Cook 20 mins)
Mirin 50 ml
Soy sauce 150 ml
salt 6 gr
sugar 3 gr


TONKOTSU BROTH
Pork Bones 2kg
Water 2.2 Ltr

RAMEN NOODLE
Bread Flour 300 gr
Baked Baking Soda 3 gr
Salt 3 gr
Water 120 ml
