If you're having a hard time finding Lillet Blanc where you live, or you just want to make your own homemade bianco vermouth, I’m sharing my recipe that can substitute Lillet Blanc or Cocchi Blanco in your next Vesper, Negroni Bianco, El Presidente, or the Gentleman’s Health 😉. This episode is also special since both Robi (the director) and I celebrate our birthdays! The homemade bianco vermouth is my present to him and he again surprised me with a present, just like last year. Nice guy, right? He also made a birthday twist on the Gentleman’s Health, check out the recipe below.

DIY Bianco Vermouth

· 470ml (16 oz) riesling wine
· 70 ml (2.33 oz) gin
· 1,5 g oak chips
· 0,8 g dried orange peels
· 0,4 g dried lemon peels
· 0,1 g jasmine green tea
· 0,3 g coriander
· 0,3 g chamomile
· 44 g sugar
· 10 g forest honey
· 0,05 g wormwood
· 0,15 g cinchona bark

Put 250ml (8,5 oz) of Riesling wine with all other ingredients into a sous vide bag. Vacuum the bag and place it in a sous vide cooker for 3 hours at 60 °C (140 °F). After it is infused, strain it and add the remaining 220 ml of wine. Store in the fridge (as you should with every vermouth).

Birthday Gentleman’s Health

· 30 ml (1 oz) Jameson Black Barrel
· 15 ml (0.5 oz) Green Chartreuse
· 22,5 ml (0.75 oz) homemade bianco vermouth
· 22,5 ml (0.75 oz) lemon juice
· 2 drops saline solution

Shake with ice, double strain into a coupe glass and garnish with a lemon peel moustache.
