Hello, September!
Spend a day with me cooking breakfast in a cozy English cottage, picking apples from an orchard, making apple pie and having a picnic under the golden setting sun.
Autumn aesthetic but make it realistic - without much home decor, staying on a budget this autumn, but also immersing yourself in fall aesthetic with seasonal activities.

Easy Apple Pie recipe:

150g cold butter
280g plain white flour
pinch of salt (if using salted butter then skip salt)
2 tbsp of sugar (about 40g)
1 egg
1-2 tbsp of cold water

Chop your butter into cubes & put into freezer for 10 minutes while prepping all other ingredients.
Combine flour with cold cubed butter by rubbing it between your palms. Add sugar and rub a bit more until you have a fine crumb.
Roughly whisk 1 egg and pour into the dough. Add a splash of water and mix by hand until you form a ball. It will still be a bit crumbly, but will stick together well.
Place the dough into the fridge for at least 20 minutes.

In the meantime peel your apples and chop into small cubes. Put them into a pan, add sugar, cinnamon and lemon juice to taste. I had about 5 tbsp of brown coconut sugar and 1 heaped tbsp of cinnamon + 1/2 of lemon. You can also add a splash of rum to add another layer of flavour. :)
Add a splash of water and simmer until apples are soft and the juice thickens.

Preheat the oven to 180C / 356F, roll out your dough to about 1/2 cm thick and transfer into a baking dish (mine was about 6" or 15cm with removable bottom). Pour apple filling inside and you can decorate the pie with the remaining dough however you like. Sprinkle some sugar on the top layer.
Bake for about 30 minutes until the pie looks lightly browned.

Enjoy hot or cold with ice cream! :)
