‘Ataya’ is Senegalese sweet tea, and in this video, Almamy shows us how to make it.
We use sticks to make a small fire, and we put charcoal on top of the sticks for it to burn slowly. The small oven, or ‘Fourno’ is typical in the region for making this daily beverage.
The tea has to cook slowly in order to get the right flavor. The green tea is slowly infused with mint, and the Senegalese culture incorporates a lot of white sugar, too much for the taste of some people, in the tea.
What’s unique about this tea is the way it is mixed and poured, ensuring there is a thick foam layer, and if you aren’t trained in pouring the tea correctly, you are sure to spill it everywhere. I speak from personal experience.
