Mamak在马来语是指印裔回教徒,他们开的餐馆叫mamak档,每间mamak档都会有这道招牌菜

Tbsp=Tablespoon (汤匙)
Tsp=Teaspoon (茶匙)

材料 Ingredients

1条青辣椒 -1pcs Red chili
1条红辣椒 - 1pcs Green chili
2粒番茄 - 2pcs tomatoes
3条辣椒叶 - 3pcs Curry leaves
1条香茅 - 1pcs Lemon grass
2片班兰叶 - 2pcs Pandan leaves
2个肉桂 - 2pcs Cinnamon
1个八角 - 1pcs Star anise

叁峇料 | Sambal tumis
4条辣椒干 - 4pcs Dry chilis
5瓣蒜头 - 5 Cloves garlics
1粒大葱 - 1pcs Onion
3粒小葱头 - 3pcs Shallots

混合调料粉(全部一汤匙) | Spices powder mix (all 1 tsp)
芫荽粉 - coriander powder
小茴香粉 - fennel seed powder
孜然粉 - cumin powder
咕噜嘛粉 - kurma mix
适量水 - water

调味 | Seasoning
一茶匙白糖 - 1tsp Sugar
半茶匙盐巴 - 1/2 tsp Salt
一汤匙酱油 - 1tbsp Soy sauce
一汤匙蚝油 - 1tbsp Osyter sauce
一汤匙黑酱油 - 1tbsp Dark soy sauce
*口味可以自由加减

01.洗净的鸡块用黄姜粉和盐巴腌制半天
Clean the chicken and marinate with turmeric powder & salt for half day

02.用石舂摏碎辣椒干,洋葱,小洋葱,姜片,和蒜头制作叁峇
Grind dry chili, onion, shallot, ginger and garlic
with stone mortar to make sambal

03.用刀处理番茄,红青辣椒,香茅
Cut tomatoes, red chili, green chili and lemon grass

04.芫荽粉,小茴香分,孜然粉,咕噜嘛粉各一茶匙,加水拌均匀
Mix coriander powder, fennel seed powder, cumin powder
and kurma mix with water to form paste

05.中火炸鸡块至表面金黄
Fry marinated chicken with medium heat until golden

06.炒香八角,香茅,肉桂和咖喱叶
Stir fry star anise, lemon grass, cinnamon and curry leaves

07.加入叁峇和混合料分,取出咖喱叶支
Add sambal and spices paste into it, remove curry leaves stick

08.加入番茄,洋葱,班兰叶,红青椒翻炒
Add tomato, onion, pandan leaves and red green chilis then stir fry

09.加入一杯水,糖,盐,酱油,蚝油,黑酱油调味
Pour 1 and half cup of water, then add sugar, salt, soy sauce,
oyster sauce and dark soy sauce for seasoning

10.加入鸡块翻炒吸收汁即可
Add fried chicken into it and stir fry until it soak all the gravy
