Hello,

after a long absence, here I am finally back!
I hope I didn't miss you too much ....
I show you today the technique I use to make eclairs with the most regular form possible. My great preference goes to the use of deodorized coconut oil because we don't feel any aftertaste after cooking as compared to a so-called neutral oil.
Finally for the glaze, I have tested different versions and I share with you my tests ...
