A Quick look at my BikePacking setup or should it be Bike Touring , which I have found works for me. I prefer the pannier way as find them easier to use than trying the lighter route of a saddle bag trying to cram everything in.
My motto is “Pack for comfort not lightness”
You don’t need to spend a fortune , any bike can be used with a few additions.
I have been wild camping for years so most of that gear works on my BikePacking trips. But what works for me may not work for you, it’s a trial and error process.
I forgot to mention that I also carry spare tubes, water filter, tools , hex keys etc etc
