★Cold Udon with Red Miso Sauce
[Ingredients for 1 person]
*All measurements are in US standard format
1 bundle or package of Udon noodles
2 tbsp Red miso
1 tbsp Mirin
1 tbsp Sake
1 tsp Sugar
To taste Any salad vegetables you like such as cucumbers, cherry tomatoes, lettuce etc.
To taste Sesame oil
To taste Sesame seeds

★Hot Red Miso Udon
[Ingredients for 1 person]
*All measurements are in US standard format
1 bundle or package of Udon noodles
400ml Dashi soup (US: 1 and 3/4 cup)
2 tbsp Red miso
1/2 tbsp Sugar
1 tbsp Sake
Topping suggestions:
Green onions, fried-tofu (Aburaage), tofu, mushrooms (Enoki, Shiitake etc.), fish cakes
1 Fresh egg
To taste Japanese red chili pepper (Shichimi/Nanami Tougarashi)
