এই আরবিয়ান রেসিপি সৌদি আরবে খুবই জনপ্রিয়। সৌদিতে এই খাবার ‘মাকবুস’ নামেও পরিচিত। মূলত পুরো রান্নায় বিভিন্ন মশলা সহযোগে চিকেন গ্রিল করা হয়। আর পরিবেশন করা হয় ভাতের সঙ্গে। তবে বিশেষ কোনও অনুষ্ঠান থাকলেই ভাতের সঙ্গে পরিবেশন করা এই চিকেন কাবসা। নাহলে ভাজা বাদা, কিশমিশ, পার্সলে আর ইয়োগার্ট সসের সঙ্গে খাওয়া হয় এই পদ।

Ingredients
------------------------------------------------
1.5kg Chicken
Cooking oil 1/3 cup (around 80ml)
Ghee 1/3 cup (around 80ml)
Dry lemon 5nos
Onion chopped 2 large
Garlic chopped 4 cloves
Raisins 1/2 cup
Carrots slices 2nos
Tomato chopped 2 large
Turmeric powder 1.5 tsp
Kashmiri chilli 2 tsp
Kabsa masala 4 tsp
Black Pepper 1 tsp
Salt to taste
Tomato paste 3 tbsp
Hot water 2 litters (as required)

Rice
--------------------------
Basmati rice 4.5 cups (soaked before 30 mins)
Hot water 1litter (as a required)
Hot green chilies 4nos


Chicken face grease mixture

Cooking oil 1 tbsp
Black pepper 1/2 tsp
Yellow food colour (optional)
