Garlic Fried Chicken Drumsticks

Ingredients:

10-12 chicken drumsticks
1 tsp salt
White pepper to taste
1 tbsp sugar
1 tsp chicken bouillon powder
1-2 tbsp crushed garlic
2 tbsp oyster sauce
1 tbsp sesame oil
2 tbsp Chinese rice wine
2 tbsp soy sauce
1 egg
2-3 heaped tsp cornstarch
1 cup all-purpose flour
1 tsp cornstarch
Vegetable oil for frying

For the Marinade:

1. Use a knife to slit the drumsticks a few times, as demonstrated in the video.
2. In a bowl, mix together the salt, white pepper, sugar, bouillon powder, crushed garlic, oyster sauce, sesame oil, rice wine, and soy sauce.
3. Beat the egg and mix in 2-3 heaped teaspoons of cornstarch to make a marinade batter.
4. Add the chicken drumsticks and marinade batter to a ziplock bag or bowl. Marinate for 2-3 hours in the fridge.

For the Coating:

1. In a shallow bowl, mix together the all-purpose flour and 1 tsp cornstarch.
2. Remove drumsticks from the marinade and dredge each piece thoroughly in the flour mixture until fully coated.
3. Place the coated drumsticks on a plate or baking sheet.

For Frying:

1. Heat 2-3 inches of vegetable oil in a skillet or pot to 350°F.
2. Fry the coated drumsticks for 5-10 minutes until golden brown and crispy.
3. Remove from oil and drain on a wire rack or paper towel-lined plate.
