Mini Spice Crumble Cake For Two

Ingredients:
Streusel Topping
22 mL (1½ Tbsp) all-purpose flour
22 mL (1½ Tbsp) sugar
22 mL (1½ Tbsp) brown sugar
15 mL (1 Tbsp) butter softened
5 mL (1 tsp) cinnamon
75 mL (1/3 cup) pecan pieces

Cake
175 mL (¾ cup) all-purpose flour
pinch of salt
1 mL (¼ tsp) baking powder
1 mL (¼ tsp) baking soda
1 mL (¼ tsp) cinnamon
60 mL (¼ cup) sugar
60 mL (¼ cup) brown sugar
60 mL (¼ cup) yogourt
1 egg
30 mL (2 Tbsp) butter, melted



Method:
Preheat oven to 180ºC (350ºF).
Grease and flour a 6" cake pan; line bottom with parchment.
Mix together all of the ingredients for the streusel and set aside.
In another bowl mix together the flour, salt, baking powder, baking soda, and cinnamon.
In a 3rd bowl whisk together the sugars, yogourt, butter, and egg.
Mix the wet into the dry and pour into the cake pan.
Sprinkle the top of the batter with the streusel mixture, and bake for about 20 - 25 minutes, or until done.
Let the cake cool on a rack for 10-15 minutes before removing from the pan (peel off the parchment as well).
Allow to cool before serving… if you can.
