Smoked Elote Dip|| Street Corn Reimagined

2lbs frozen corn
½ cup cotija cheese
1/2 cup white cheddar shredded
½ bunch Cilantro
1 cup crema
½ red onion diced
1 jalapeno diced
1 lime
½ cup mayonnaise
2 tbsp hatch chili powder
2 tbsp fajita seasoning(See my seasoning)

Spread dried, thawed corn on a griddle over medium heat until the corn gets a roasted look. (Optional). In a skillet, add all ingredients and mix to combine. Smoke on smoker for 45 minutes at 300-350. (Can also be done in the oven). Garnish with cotija cheese and Cilantro and serve warm.
