Hello everyone,
Once a month, using the Wiswell Enhance oven,
I have uploaded recipes that even beginners can easily follow.
(Thanks Wiswell for sponsoring the video)

This recipe is Chocolate sponge cake(Genoise).
Genoise is the sponge cake that is used for making shortcakes.

It's an all-round recipe that goes well with any shortcake that needs chocolate cake sheets.
In the next video, I'll use this sheet to make a strawberry chocolate shortcake :)

▶Ingredients (for 1 circular mold (15cm in diameter))

-115g eggs
-30g yolk
-75g Granulated sugar
-15g starch syrup
-63g cake flour
-12g corn starch
-18g cocoa powder(Dutch-processed)
-12g unsalted butter
-15g whole milk

1) Beat the egg and yolk well with a whisk.
2) Add sugar and starch syrup and heat it up to 37 to 42 degrees by heating over hot water.
3) Whisk the warm egg mixture at high speed with a hand mixer until the foam becomes very fluffy and firm.
4) Make the air bubbles dense using the lowest speed of the hand mixer until the batter becomes silky smooth.
5) Add the sifted flour, corn starch, and cocoa powder and fold gently so that the bubbles do not collapse.
6) Add the milk and butter mixture warmed to 40 to 60 degrees and fold lightly just until evenly mixed.
7) Pour the batter into the mold, then bake for 30 minutes at 170 degrees Celcius (Wiswell Enhance Oven)
* Smeg/Unox/Gierra: 27 to 30 minutes at 160 degrees Celcius
* The intensity of heat is different for each oven, so you need to adjust the temperature and time individually.
8) Drop the baked cake to drain the vapor, and turn it over on a cooling net to cool it down completely.


* Storage: After cooling down completely, seal it with a plastic bag, and leave it at room temperature for more than half a day to get moister. Freeze the baked cake if you want to store it logner. (It can be stored for about 2 weeks in the freezer.) When stored in a freezer, moisture dries quickly, so keep it sealed so that it does not come into contact with air.
