Pravi smrčak (Morchella esculenta Fr.) je jestiva gljiva iz porodice Morchellaceae. Klobuk je žućkasto do svijetlosmeđ, jajolik, tupog vrha, prekriven nepravilnim udubinama koje su kao pčelinje saće, u unutrašnjosti šupalj, visok 4-8 cm. Stručak je bjelkast, kasnije žućkast, svjetliji od klobuka, u donjem dijelu zadebljan, šupalj, visok 4-6 cm, debeo 2-3 cm. Meso je bijelo, krhko, tanko, ugodnog mirisa i okusa. Spore su eliptične, glatke, otrusina je kremasto bijela. Stanište Raste na travnjacima, uz vlažna područja, uz rjieke, u svijetlim šumama i na šumskim čistinama. Etimologija Latinski naziv roda Morchella latinizirana je njemačka riječ morchel što znači gljiva. Naziv smrčak spominje srpski jezikoslovac Vuk Karadžić (1787. – 1864.) u rječniku 1852. godine, a potječe od smrča, smreke, gljive koja raste pod smrekama.[1] Na stranim jezicima nazivi su common morel, yellow morel, true morel, morel mushroom, sponge morel (eng.), Speise-Morchel, Rund-Morchel (njem.), morille comestible (fr.), cagarria (špa.), užitni smrček, mavrah (slo.), svetli smrčak (sr.). Upotreba Jestiva je gljiva, odlične kvalitete. Ne smije se jesti sirova, već dobro termički obrađena jer u suprotnome izaziva teže probavne tegobe. Morchella esculenta (commonly known as common morel, morel, yellow morel, true morel, morel mushroom, and sponge morel) is a species of fungus in the family Morchellaceae of the Ascomycota. It is one of the most readily recognized of all the edible mushrooms and highly sought after. Each fruit body begins as a tightly compressed, grayish sponge with lighter ridges, and expands to form a large yellowish sponge with large pits and ridges raised on a large white stem. The pitted yellow-brown caps measure 2–7 centimetres (1–3 inches) broad by 2–10 cm (1–4 in) tall, and are fused to the stem at its lower margin, forming a continuous hollow. The pits are rounded and irregularly arranged. The hollow stem is typically 2–9 cm (1–3+1⁄2 in) long by 2–5 cm (1–2 in) thick, and white to yellow. The fungus fruits under hardwoods and conifers during a short period in the spring, depending on the weather, and is also associated with old orchards, woods and disturbed grounds.
