I never met anyone that didn't like Pork Chop with tomato. Especially when I grew up in a Cantonese household and surrounded by Cantonese friends and family. Like any Chinese homecooked meal this dish is fast and easy to prepare. And will certainly satisfy the appetite of any kids that don't like eating their vegetables.

INGREDIENTS:
400g Pork Chop
200g Tomato
60g Yellow Onion
3-4 Garlic Cloves
1 Spring Onion Stalk

Pork Marinade:
2 Tablespoons Light Soy Sauce
1Tablespoon Chinese Rice Wine
1 Teaspoon Dark Soy Sauce
1 Teaspoon Sugar
1/2 Teaspoon Ground White Pepper
1 Tablespoon Cornstarch (a.k.a. corn flour)
2 Teaspoons Cooking Oil

Sauce:
3/4 Water
1 Tablespoon Tomato Ketchup
1 Teaspoon Sugar
1 Teaspoon White Vinegar
2 Teaspoon Light Soy Sauce
2 Teaspoon Cornstarch

The first thing to do is to marinate the pork. In a mixing bowl add pork and all the marinade sauce **except cooking oil for now**. Mix well and then add oil and mix well again. Marinade minimum 15 minutes.

Slice up the tomato, onion, garlic, and spring onions.

Add all sauce ingredients in a mixing cup and stir well.

Heat pan on medium-high heat. Add a few tablespoons of oil when the pan smokes and add pork. Cook one side for at least a minute without moving. You want to put a nice sear on the pork. Flip to the other side and cook the same way. Careful not to overcook. Should be at least 80% cooked and then remove to a plate.

Heat the pan again on medium-high heat. When it smokes add two tablespoons of cooking oil. Drop in the tomato and onions and cook until onions turn clear. Then add the garlic cook for 30 seconds and add the sauce.

When the sauce starts to boil the sauce will thicken. Then drop in the pork and cook for about another minute or two until the pork is fully cooked.

Plate and enjoy this goes terrific with rice!
