Today we're making Philadelphia cheese. 1 liter of kefir. 400 gr sour cream 25% fat. The fattier the sour cream, the more cream cheese you'll get. 1 tsp salt. Mix well. Taste for enough salt. Prepare a colander and cheesecloth. I will use an extra napkin. Pour out the sour cream. We go for half an hour. Serum is easy to remove. Now cover with cling film. From above we put a load of 500 gr. We put it in the refrigerator overnight. We had 12 hours and our cheese is ready. Just look at the texture of the cheese. It's very soft and airy.
