I found a used Old Country Pecos Smoker and spend a few hundred dollars modifying it as opposed to buying an offset smoker with an insulated firebox for over $3,000! Turned out great and now I have no trouble holding temperatures and no fluctuation from side to side in the cook chamber. I just add one small split every 45-60 minutes and she does great!
