Green Peas (Matar):

Excellent Source of Protein: Green peas are a good plant-based source of protein, making them suitable for vegetarians and vegans. Protein is essential for muscle repair, growth, and overall body function.
High in Fiber: Like cauliflower, green peas are also rich in dietary fiber, which aids digestion, promotes satiety, and helps maintain a healthy weight.
Vitamins and Minerals: Green peas are rich in vitamins C, K, and folate, as well as minerals like iron and manganese. These nutrients are important for immune function, bone health, and energy production.

Recipe:
Heat oil in a pan or kadhai over medium heat.
Add cumin seeds and let them splutter.
Add finely chopped onions and sauté until they turn translucent.
Add ginger-garlic paste and chopped green chilies (if using). Sauté for another minute until the raw smell disappears.
Add chopped tomatoes and cook until they turn mushy and oil starts separating from the masala.
Now add turmeric powder, coriander powder, red chili powder, and salt. Mix well and cook for 2-3 minutes.
Add cauliflower florets and green peas. Mix everything together until the masala coats the vegetables evenly.
Cover the pan and cook on low to medium heat, stirring occasionally, until the cauliflower and peas are tender yet firm. This usually takes around 10-12 minutes.
Once the vegetables are cooked, garnish with freshly chopped coriander leaves.
Serve hot with roti, paratha, or rice.
