Naram Mitho Selroti

Selroti is a popular Nepali recipe cooked for many occasions. It is cooked with rice batter and fried in the ghee or oil. It tastes sweet and delicious.

Ingredients for Batter

Rice 1300 gm/ 10 cups
Sugar 300gm/ 1 cup
Ghee 250gm/ 2 large spoon

Ingredients for Cooking

Ghee 700gm or Oil 1 litre

Preparing Batter
1. Take a large bowl, soak the rice in the water for overnight or at least 8 hours
2. Drain the water from the rice and keep one mug water to use for making batter.
3. Take a blender, grind the1/4 part of soaked rice without water to make rough flour. (Rough flour help to make Selroti crunchy}
4. Grind the other half-soaked rice with one large spoon water (Which you have saved in the mug) to make a thick batter.
5. Now mixed both flour and batter very well using your hand.
6. Now take a bowl mix the sugar and ghee to form the cream and add to the prepared rice flower.Mix all the ingridints together.
7. Now slowly keep adding rest of the water from the mug until it becomes runny consistency batter. Cover the batter with cling film and ready to rest for at 4 hour or more,
7. After 4 hours the batter will become little thick. Now one large spoon water, mix it well to suitable consistency so that you can pour.

Cooking
1. Take a pan, heat the ghee in high flame.
2. Take the cone (here I have used Bottle’s Mouth), fill the batter in the cone, now pour the batter in the pan in round shape slowly, turn gently to other side. One selroti takes about 90 seconds to cook. It will become round and light brown roti and inside will be hollow.
3. Selroti is ready now and can serve with curry or with the tea.
