Vegetable Chow Mein
These are my favorite noodles, not just because they are so delicious, but also because of all the hidden vegetables. Chow Mein can be made with either fresh or fried noodles. If you can’t find chow mein noodles, you can use thin spaghetti noodles. Make sure your ingredients are ready and the sauce is mixed before you start cooking. The main cooking happens very quickly.

INGREDIENTS

Step one - Vegetables
2 cups | cabbage
one | capsicum
half | red onion
one | carrot
four | green spring onions
2 tbs | crushed garlic (fresh or minced)


Step two - Sauce
1 tsp | Chinese salt (msg)
1 tsp | sugar
1 tsp | white pepper
1 tbs | vinegar
1 tbs | soy sauce
1 tbs | dark soy sauce
1 tbs | chili sauce
1 tsp | sesame oil

Step three- Noodles
700gm | noodles


METHOD
Cut the vegetables
Get the sauce ready
Boil the noodles according to the packet instructions- I used Wan Hua fresh chow Mein noodles-any dry noodles can also be used, tossing cooked noodles with oil will prevent them from sticking together and clumping, however I did not need to do this step with fresh noodles
Heat the wok until it starts smoking- this makes the surface of the wok nonstick
Add 3Tbs oil, swirl the oil around so it covers the surface area of the wok
Add minced garlic, I used packaged, fresh can also be used
Add the vegetables
Stir fry for a minute
Keep the flame at its highest throughout the cooking process
Now add the noodles
Keep stir frying at high heat
Pour in the prepared sauce
Stir fry for just a few minutes
Enjoy!
