Lemon Chicken Scaloppine with Chicken Breasts... mmmhhh, I’m already thinking about that amazing creamy sauce that forms at the end of this quick and extraordinary little recipe, and the endless “scarpetta” (bread-dipping) we’ll get to enjoy!

This is a recipe that started in our home with my father, and I remember very well that he used chicken breast because it stays more tender and we, as kids, loved those thin chicken slices!

I assure you that this lemon chicken scaloppine has nothing to envy compared to the more classic veal scaloppine… but it all comes down to personal preference!

Now I’ll leave you to the recipe so you can tell me if the scarpetta I’m talking about isn’t truly exceptional!!! :-)

Ingredients (for 2 servings):
3 chicken breast slices
Half a lemon
1 shallot
500 ml broth
50 g butter
Flour, as needed
Salt, as needed
Parsley, as needed
Extra virgin olive oil, as needed
White wine
Method:
Prepare 500 ml of broth, finely chop the shallot and parsley, and set aside a bowl with some flour.
Cut the chicken breast slices into 2-3 parts to get relatively small pieces (you can decide the size as it won’t affect the success of the recipe).
Lightly flour the chicken slices and place them on a plate.
Meanwhile, heat a pan with a drizzle of oil and butter; after a few minutes, add the shallot.
After a couple of minutes on medium-low heat, dredge the chicken slices in flour once again and place them in the pan.
Sear the chicken on both sides over medium-high heat, add a pinch of salt to each side, and then sprinkle with parsley.
Once the chicken is hot, deglaze with white wine, mix well, and after the wine evaporates, add a splash of lemon juice, cover with broth, and bring to a simmer.

Cook for about 5-10 minutes with the lid on, adjusting the broth if you see that the scaloppine dry out too much!
When almost fully cooked, uncover the pan and lower the heat until you see that amazing creamy sauce I mentioned earlier! 🤤 Now you can finally grab your kilo of bread and make a huge scarpetta with the scaloppine!! Haha
