Today I'm sharing an easy recipe for Reuben Sliders--the perfect sandwich for your St. Patrick's Day festivities!

REUBEN SLIDERS:
1/2 c. mayo
1 heaping Tbsp. sweet pickle relish
1 heaping Tbsp. ketchup
1/2 tsp. dried minced onion
1/2 tsp. sugar
splash of apple cider vinegar
pinch of salt & pepper

1/2 stick unsalted butter, melted
1/4 tsp. garlic powder
1/4 tsp. dried minced onion
1/2 tsp. poppy seeds

1/2 lb. corned beef, sliced
8 oz. Swiss cheese, sliced
1/2 c. sauerkraut, drained
1 package Hawaiian rolls, sliced in half lengthwise

Preheat oven to 350*. Make the thousand island dressing by combining the mayo, ketchup, 1/2 tsp. dried minced onion, 1/2 tsp. sugar, splash of apple cider vinegar, and a pinch of salt and pepper. (You can also use store bought!)

Mix the 1/4 tsp. garlic powder, 1/4 tsp. dried minced onion, and 1/2 tsp. poppy seeds into the melted butter.

Place the bottoms of the Hawaiian rolls into a greased, 13x9" baking dish. Spread a generous amount of thousand island dressing on top. Layer the corned beef evenly on top, followed by the sliced Swiss cheese. Sprinkle the sauerkraut over top. Place the lids of the buns onto the sandwiches. Pour/spread the melted butter mixture over the tops of the buns. Cover with foil and bake at 350* for 10 minutes. Uncover then continue baking for an additional 10 minutes or until golden and the cheese has melted. Slice and serve. ENJOY!
