Malai kofta Ingredients-

For Kofta filling
¼ cup dry fruits chopped
50 gm mawa
1 tblspn saffron milk slurry
pinch of salt
pinch of white pepper
pinch of green cardamom powder

For Kofta
1 cup grated paneer
1 med potato boiled and grated
salt to taste
1 tespn white paper
1 pinch of green cardamom powder
1 tblspn chopped green chilli (optional)
½ tblspn chopped ginger (optional)
1 tblspn cornstarch or plain flour

For Malai Kofta Gravy (No-1)
2 tblspn oil
1 bay leaf
2 green cardamom pods
3 clove
1 cinnamon stick
1 tspn cumin seeds
2 med onion chopped
1 tblspn ginger, garlic paste
2 med tomatoes chopped
½ tespn turmeric
1 tblspn coriander powder
1 tspn kashmir red chill powder
100 gm kaju
After grinding gravy paste nest steps
add 2 tblspn ghee in a pan
add 1 tblspn ginger, garlic paste
1 tspn kashmir chili powder
add gravy and cook until rawness goes off
now add ½ tspn dried kasori methi powder
pinch of green cardamom powder.
1 tblspn grated mawa
1 tblspn butter
½ cup cream
1 tblspn saffron slurry.
Serv hot with choice of indian bread even Rice 🍚 or pulao as well.

Mali kofta gravy (No-2)
1 tblspn ghee
1 tblspn ginger garlic paste
1 cup white gravy
½ cup hot milk
1 tblspn grated mawa
½ tespn sugar powder
1 tspn white pepper powder
pinch of green cardamom powder
salt to taste
1 tblspn butter
2 tblspn saffron milk slurry
½ cup cream
Garnish with dry fruits, Rogan saffron and Cream.
Serve with choice of indian bread.
