BIKO RECIPE
INGREDIENTS:
5 cups glutinous rice (malagkit)
3 cans coconut milk
1 can coconut milk for Latik (Toppings)
2 cups dark brown sugar
1 cup light brown sugar
PROCEDURE:
Cook the Rice:
*Wash the glutinous rice thoroughly until the water runs clear.
*cook it in rice cooker.
Prepare the Toppings:
*Pour 1 can coconut milk (may add
1 more can coconut milk for more toppings)
*Cook until the milk reduce and the "latik" forms into golden brown and the oil separate. Set aside.
Prepare the Coconut Mixture:
*In a large non-stick skillet or wok, combine the remaining 3 cans coconut milk, boil until oil appears, add the sugar.
*Cook over medium heat, stirring continuously until the sugar is dissolved and the mixture starts to thicken.
Combine the Rice and Coconut Mixture:
*Add the cooked glutinous rice to the coconut mixture. Mix well until the rice is evenly coated.
*Sprinkle the latik over the top of the biko.
