Spatchcock Turkey

It’s Turkey Time! You want a delicious turkey dinner without the long wait? Give this recipe a try! This turkey was tender, moist and the flavor was amazing. You won’t be disappointed or get tired of leftovers with this recipe!

• 1 -15 LB Turkey
• 3 TBSP of Olive Oil
• 3 TBSP of Killer Hogs AP
• 2 TBSP of Killer Hogs Hot BBQ Rub

For this cook we used our pellet smoker. We used apple pellets and set our temp at 350 degrees. Prep on this bird is easy. Remove all the giblets and dry the turkey using paper towels. Score the backbone down each side with a sharp knife. Using kitchen shears cut down each side of the backbone and remove the spine. Flip the bird over and apply pressure to the top of the breasts pushing down. This may take some extra force, but you will see the bird flatten. Once you have essentially butterflied the turkey, give it a good coat of olive oil. Then season with the rubs above or use your favorite. Let stand for 15 mins after seasoning and place in the center of your pellet grill. After one hour spray or brush the skin with butter. After the second hour rotate the turkey 180 degrees for even cooking. We cooked our turkey until it reached 165 degrees in the breast. This took about 3 hours total cooking time. Once temp is met, remove from the grill and rest for 15mins prior to carving.
