During the production of Off the Beaten Palate, I visited one of the oldest smoke houses in the world, in Cap-Pele, New Brunswick, Canada. As a kid growing up not far from this little village, you could smell the smoke in the distance when you drove through. Amazing that so much herring from little Cap-Pele, is transported to third-world countries.
