This is a basic chicken risotto recipe. Nice and creamy, incredibly delicious. Very quick and easy.
INGREDIENTS :
500 grams of chicken breast
250 grams of rice
2 ports
2 carrots
1 clove of garlic
100 grams of canned peas
spices: salt, vegetables, pepper, dry parsley
tomato puree 1 tbsp
a little celery (we used frozen celery-carrot-parsley cubes)
RECIPE:
✅ Prepare the stock: boil water, add a beef cube, some vegetables and salt
✅ Cut 500 g of chicken breast into cubes and also vegetables: 2 onions, 2 carrots and 1 clove of garlic
✅ Fry the vegetables for a few minutes in a deep pan and add the chicken. Combine and fry together for 5 minutes, then add salt and pepper to everything
✅ Add 250 g of rice that we previously washed, mix and add canned peas, 2 tablespoons of vegetables and 1 tablespoon of tomato puree. Combine everything nicely. Add 200 ml of stock and simmer for 10 - 15 minutes, you will see when the stock evaporates. Be sure to stir from time to time
✅ When the rice remains dry, add 200 ml of stock again, mix everything and simmer for an additional 10 minutes
✅ After these 10 minutes, taste the rice and, if necessary, add a little salt and dry parsley. Add another 200 ml of stock and simmer for another 10 minutes and our risotto is ready. Rice nicely cooked, chicken tender and tasty.
