Finally cooked my first brisket. Turned out better than expected! Also did a rack of beef ribs and some homemade sausages I made earlier on this channel that I had frozen. Brisket and ribs were seasoned with just Diamond Crystal Kosher Salt, and course ground black pepper. No binder. Membrane left on the ribs as I typically do with beef back ribs. Wood used was Oak and Hickory, Oak being the majority. Cook time was 12hrs for the Brisket. Ribs were done in about 5hrs, sausages about 2hrs.
