This video will teach you how to make Cheddar Broccoli Chicken.
You will need

CHEDDAR BROCCOLI CHICKEN by The Sanders Kitchen

INGREDIENTS
6 chicken thighs
8 cups frozen broccoli rinsed and trimmed
2-3 reams Ritz crackers
2 tbsp. Paul Prudhomme’s Poultry seasoning
4 tbsp. melted butter for topping.
1 cup grated cheddar cheese for topping

CHEDDAR SAUCE
4 tbsp. butter
4 tbsp. flour
4 cups whole milk
2 ½ cups shredded cheddar cheese
1/2 tsp. Salt and pepper

INSTRUCTIONS
Remove the skin and bone from chicken thighs.
Remove that piece of grizzle and any extra fat.
Cut the thighs into 1 inch squares.
Sprinkle on the poultry seasoning and mix well into the chicken. Set aside.
Cut the broccoli into bite size pieces. Set aside.
Put the Ritz crackers into a gallon size zip lock bag and crush with a meat tenderizer. Set aside.

Last, let’s make the cheese sauce.
Start by melting the butter in a sauce pan.
Whisk in the flour until all flour and butter are incorporated.
Start adding in 4 cups of milk. Whisk-Whisk-Whisk.
As soon as the milk starts to bubble, add in the cheddar cheese and whisk whisk-whisk.
When the sauce comes together, turn the fire off and remove the pot from that burner.
If the sauce looks a bit thin, whisk in another ½ cup of cheddar cheese while it’s still hot.

ASSEMBLY
Using several personal casseroles or one larger casserole doesn’t matter.
Chicken goes in first. Broccoli goes on next. Add lots of cheese sauce and a bit of cracker crumbs.
Now sprinkle on some grated cheddar and a bit more cheese sauce.
Now coat the top with cracker crumbs.
Last, sprinkle on the melted butter to help brown those Ritz cracker crumbs.

Put your casseroles on a baking pan and put that all in the center of a 350°F pre-heated oven. Bake for 45 minutes.

Remove the casseroles and allow them to cool for 15 minutes before serving.

This is a wonderful recipe that amazed me at Cracker Barrel.

Chef’s Notes:
You can use chicken breast if you wish. Butterfly the breast before cutting it into chunks for even cooking. Don’t use whole chicken breasts or thighs.
You can use a 6x9 casserole dish instead of individual servings. Doing so will most likely result in using all of the broccoli, cheese sauce and cracker crumbs.
