apple & cinnamon muffin recipe (for 12 muffins):
• 2 2/3 cups all-purpose flour
• cinnamon (measure with your heart)
• 2 teaspoons baking powder
• 1 cup granulated sugar
• 3/4 cup plus 2 tablespoons vegan butter or vegetable oil
• 1 1/2 cups milk (i used oat milk)
• 2 tablespoons lemon juice (or cider vinegar)
• 1 teaspoon vanilla extract
• 4-6 apples peeled, cored and diced ( i used honeycrisp apples)
combine the wet ingredients minus the butter and set aside.
combine all the dry ingredients in a bowl, mix then add the liquids. add the butter, mix and add the apples last. spoon the batter into the muffin pan.
optional but highly recommended : sprinkle cinnamon sugar on top.
bake for 25-30 minutes at 180°C (350°F) until the tops are golden. let them cool down outside before eating.
