Madeleines recipe
130 grams self raising flour
100 grams caster sugar
120 grams vegetable oil
2 medium eggs
2 tablespoons milk
1 teaspoon vanilla extract (or other flavouring)

Method for baking Madeleines

Preheat oven to 190°C
Butter and flour 2 Madeleine trays.
Mix all the ingredients into a bowl until smooth
Divide the mixture between the trays
Bake in the oven for 8-10 minutes
Transfer to a cooling rack to cool completely
Serve and Enjoy!

Buttermilk scones recipe
Ingredients

450 grams self raising flour
250 ml buttermilk or plain yoghurt, amasi or lacto
150 grams butter
130 grams sugar
1/2 teaspoon salt
1 large egg
2 tablespoons milk
Method

Preheat oven to 225 Celsius.
Add the flour and salt into a large bowl.
Put the butter into the flour mixture and then use your hands to rub in the mixture. Rub in until all the butter has been rubbed in.
Mix in the sugar with your hands and then make a well in the centre.
Add the egg and milk into the buttermilk and mix well, pour the mixture into the flour mixture and then mix together with a fork.
When it is too thick to mix with the fork put the fork to one side and use your hands to form a dough with the wet flour mixture.
Put some flour on a work surface and then put your dough on the flour. Use a rolling pin or your hands to pat down the dough until it is thick enough to start cutting out shapes.
Use a round cookie cutter, any size you want, and cut the buttermilk scones out and put them on a baking tray.
Gather up any remainder dough and shape it up again and cut more scones out. Usually there is a bit of dough left over which is too small to use a cutter on. Just shape it with your hands and put it on the baking tray.
Brush some milk on top of the scones and bake them in the oven for 15 – 20 minutes until slightly golden brown on top.

Ingredients : Easy Banana Cake Recipe
225 grams self-raising flour
1 teaspoon baking powder
1/2 teaspoon cinnamon powder
1/4 teaspoon mixed spice
1/8 teaspoon freshly ground nutmeg
a pinch of ginger powder
1/2 teaspoon vanilla extract
1/8 teaspoon salt
2 tablespoons milk
100ml vegetable oil
2 large eggs
100 grams caster sugar
75g soft light brown sugar
2 mashed bananas
Method : Banana Cake
Butter and flour your loaf tin, a 900g loaf tin roughly 17cm x 9cm x 9cm.
Pre-heat your oven to 180 Celsius
Put all your ingredients into a large mixing bowl and mix until well mixed. You can measure all your ingredients into one bowl to save on washing up. (Just remember to set your scale to zero after each ingredients is added.)
Pour your mixture into the prepared loaf tin and level the top. Bake for 40-50 minutes. You can check after 40 minutes to see if it’s ready. Put a cake tester in the middle of the cake, if it comes out clean it is ready.
Leave the cake in the tin for about 5 minutes before turning it onto a cooling rack to cool completely.
