Vermicelli kheer | caramel vermicelli kheer | caramel payasam | kheer banane ka tareeka

Ingredients
▪️Roasted vermicelli/ सेंवई - 1/2cup
▪️milk / दूध -5 cups
▪️sugar/ चीनी - 1/2cup (adjust to taste)
▪️1/2 teaspoon cardamom powder/ इलायची पाउडर -1/2tsp
▪️cashews/ कश्यु -10-15
▪️Almonds / बादाम-10-15 (sliced)
▪️pistachio/ पिस्ता -10-15
▪️A few strands of saffron soaked in 2tbsp milk(optional)
▪️clarified butter/ ghee/ घी -1/4cup used for roasting dry fruits, vermicelli and to make caramel
▪️1/4cup sugar is required to make caramel

Instructions
▪️Heat 1 tablespoon of ghee in a pan, Add vermicelli and roast until golden brown, stirring continuously to avoid burning.
▪️ gradually pour milk and cook until vermicelli soften
▪️add saffron milk and sugar cook it on medium flame and keep stirring for about 5 min.
▪️lastly add roasted dry fruits and cardamom powder mix well and cook until it starts to thicken keep stirring occasionally.
▪️ now in another pan add 1tsp ghee and 1/4sugar let it melt on low flame once it starts melting keep stirring and then add this tadka to caramel kheer
▪️serve either hot or cool and enjoy
