Ingredients:
14 grams of yeast (active dry yeast)
1 tablespoon of sugar
1 teaspoon of salt
30 milliliters of oil (2 tablespoons)
900 grams of all-purpose flour
600 milliliters of warm water (approx. 40°C / 104°F)
Recipe:
1. Prepare the Yeast Mixture:
In a small bowl, combine 14 grams of yeast, 1 tablespoon of sugar, and 100 milliliters of the warm water. Stir gently until the yeast dissolves. Let it sit for about 5-10 minutes until frothy.
2. Mix the Dough:
In a large mixing bowl, combine 900 grams of flour and 1 teaspoon of salt. Make a well in the center.
Pour the yeast mixture, the remaining 500 milliliters of warm water, and 30 milliliters of oil into the well.
Stir until a rough dough forms.
3. Knead the Dough:
Transfer the dough to a lightly floured surface. Knead for 10-15 minutes until the dough is smooth and elastic.
4. First Rise:
Place the dough in a lightly oiled bowl, cover it, and let it rise in a warm area for 1-2 hours, or until doubled in size.
5. Shape the Baguettes:
Punch down the dough and divide it into 4 equal portions.
Roll each portion into a rectangle and then into a log shape. Pinch the seams and elongate the dough into a baguette shape.
6. Second Rise:
Place the shaped baguettes on a baking tray lined with parchment paper. Cover and let rise for 30-45 minutes.
7. Preheat the Oven:
Preheat your oven to 220°C (430°F). Place a shallow pan of water on the bottom rack for steam.
8. Score the Baguettes:
Make 3-4 diagonal slashes across the top of each baguette with a sharp knife.
9. Bake the Baguettes:
Bake for 20-25 minutes until golden brown and the crust is crispy.
10. Cool and Serve:
Transfer the baguettes to a wire rack to cool before slicing and serving.
