Green chutney recipe-    • গ্রীন চাটনি(তিন রকমের)|ধনেপাতা পুদিনা...  

A. Chicken leg piece : 2 nos, deep cut on flesh. Now add the below items to marinate:
B. Salt : According to taste
C. Black pepper powder : 1 tsp
D. Kashmiri red chilli powder : 1/2 tsp
E. Lemon juice : 1/2 lemon

Now lap all the ingredients over the chicken flesh, particularly press them on the deep cuts to penetrate inside of the flesh. Now keep aside for 15 to 20 minutes. Take a bowl and add:

F. Hung curd : 3 tbsp
G. Ginger garlic paste : 3 tbsp
H. Red chilli powder : 2 tsp
I. Garam masala powder : 1/2 tsp
J. Salt : little bit
K. Food colour : 1 pinch
L. Mustard oil : 2 tbsp
M. Kashmiri red chilli powder : 2 tbsp

Mix them well and make the masala paste. Now take bowl, keep the marinated chicken and mix the masala paste thoroughly. Keep it in freezer, for 4 hours(Over night marination will increase taste and softness.). After 4 hours take it out. Take one frying pan, add 1 tsp refined oil and little butter. On the other hand, take one charcoal piece on the flame, and let it burn . Now on the frying pan keep the chicken pieces, roast them slowly with medium flame, changing the side again & again. Now take a small steel bowl, keep in between chicken leg pieces, now take the red hot charcoal in the bowl, add little butter, cover the frying pan. This mechanism will bring the smoky flavor, as we are not using Tandoor oven. Keep it covered for 5 minutes.
Now cover one gas burner with Aluminium foil, cut the burner portion round, keep one steel grill over foil, brush little oil on grill, keep the leg pieces on the grill and roast for two minutes with medium flame. Don't over roast else masala will get burnt. Serve with green sauce, sliced onion etc. Enjoy.
