Noen Gur or Khejur Gur is very famous throughout Bengal. We use to make lots of traditional sweets and puddings with this delicious, aromatic and flavourful sweet thing to celebrate winters. Nolen Gur is also called as Date Palm Jaggery. Khejur gurer payesh, it is a traditional Bengali rice pudding recipe with the richness and flavour of the tasty nolen gur. নতুন খেজুর গুড়ের ক্ষীর বা পায়েস শীতের অন্যতম একটি ডেজার্ট আইটেম। যশোরের অঞ্চলের অথেনটিক এই খেজুর গুড়ের পায়েস/ক্ষীর রেসিপি অনেকেই অনেক ভাবে তৈরি করে থাকেন, তবে রেসিপিটি তৈরি করেছি একেবারে ট্র্যাডিশনাল ভাবে। নলেন গুড়ের পায়েস, খুবই মজাদার শীতকালীন এই ডেজার্টটি খেতে অনেক সুস্বাদু। আশা করি বাসায় ট্রাই করবেন এবং কেমন লাগলো অবশ্যই জানাবেন...

তৈরী করতে লাগছে - (Ingredients)
আতপ চাউল ( Sunned Rice) - 200 gm
ফুলক্রিম তরল দুধ (Fullcream Liquid Milk) - 2.5 litter
খেজুরের গুড় (Date Palm Jaggery) - 1.25 Cup
সবুজ এলাচ (Green Cardamon) - 4 pcs
তেজপাতা (bay leaf) - 1 pcs
লবণ (Salt) - to taste
নারিকেল (Coconut) - 1/2 Cup
কিসমিস (Raisin) - 8-10 pcs
কাজু বাদাম (cashew-nut) - 8-10 pcs
