Who would have thought that spinach and coconut are such a match made in heaven? Add some onions and salt to that and you've got yourself Carin's American version of the South Pacific dish palusami. You'll be shocked at how easy yet insanely delicious this is.

Recipe:
South Pacific Spinach
A Westernized Island Bake
Makes: 4 Servings

Stuff You Need
1 10 oz bag of fresh spinach
1 can coconut cream (or you may use the coconut cream from 2 cans of full fat coconut milk, removing only the cream from the can)
1 medium-sized onion, chopped
Himalayan pink salt to taste or salt of your choice

Let’s Cook!
1. Preheat oven to 350°F (177°C).
2. In a 9x13 inch baking dish, layer spinach and then onions. Repeat until pan is full. It’s ok if it is very
full because the spinach will shrink.
3. Sprinkle with salt.
4. Add coconut cream.
5. Bake covered for 40 to 45 minutes.

Chef Tips
This is my American version of my absolute favorite dish that I had while doing mission work in Samoa. The original native dish is called palusami and is normally made with taro leaves. Spinach, being much easier to find in Western countries, makes a great substitute.

Gluten-free, soy-free, nut-free, and oil-free.
