A lot of folks can fillet katsuo better than me, so use this video only as reference material. This method is fine for handling katsuo under 10 kilograms. It's really no different from any other fish bar a few points.

This was a difficult video to make due to the position of the camera, which made it inconvenient for me if I want to show things to the viewer.
