Amazingly tasty chicken kebab with a sweet & zesty barbecue sauce. Served on a bed of coconut rice.

Coconut Rice Ingredients
1 cup basmati rice
1 can coconut milk
Just less than 1 cup water
1 knob of butter
salt & pepper

BBQ Sauce Ingredients
1/4 cup pineapple juice (fresh or canned)
1 cup ketchup
1/4 cup honey
1/4 cup rice wine vinegar
2 tablespoons wuster sauce
1 teaspoon cumin
1 teaspoon. mustard powder
1 teaspoon paprika
1 teaspoon red chili flakes
black pepper
1/4 cup water

Kebab Ingredients
2 breast of chicken
1 red pepper
1 red onion
1 jalapeño (optional)
1/4 a fresh pineapple (or can)
