Today, I want to share a unique recipe from the villages of Iran with you. It's a dish called "Saj Ichi" made with veal and buttermilk. This special dish is one of the most delicious meat dishes ever. To make it, we start by chopping the meat and frying it. Then, we cook it with water and onions and finally add spices and buttermilk. We let the meat cook on low heat for a few hours and serve it with rice. This delightful and unique dish is one of the famous dishes of Talash land and has many fans.

The people of this land are accustomed to consuming high-calorie foods due to their daily tasks and harsh weather conditions. Over time, special recipes have developed to meet the physical needs of the people in this region.
