At the ripe old age of 35, I finally made my very first pot of Chicken Pho from start to finish. Restaurant Chicken Pho has very little flavor, so I've learned to prefer beef. This magic pho with mythical healing powers is relatively simple to make and full of flavor.

My mom kept changing her directions since we were trying to compress the process and still eat before midnight. I've made the timing clearer in the recipe on my blog. The active cooking time and techniques are not difficult for pho, but it does take time and patience to let the flavors develop. We highly suggest starting the process the night before you plan to serve the pho, invite friends or family- it is a meal best shared.
