Arugula Salad with Apple & Pecan Dressing
Ingredients
For the Salad:
150g arugula, washed and dried
1 large apple, cored and sliced into thin slices
30g pecans, toasted (reserve half for topping)
50g dried cranberries
For the Dressing:
1 tbsp tahini
40 ml freshly squeezed orange juice
1 tbsp olive oil
1 tbsp apple cider vinegar
1 tbsp honey
1/8 tsp cinnamon
1/8 tsp ginger
Salt, to taste
Instructions
Prepare the Salad Ingredients:
Wash and dry 150g of arugula.
Core and slice 1 large apple into thin slices, then cut the slices into quarters.
In a dry skillet, lightly toast 30g of pecans until fragrant, then chop half of them roughly.
Make the Dressing:
In a jar, combine 1 tbsp tahini, 40 ml freshly squeezed orange juice, 1 tbsp olive oil, 1 tbsp apple cider vinegar, 1 tbsp honey, 1/8 tsp cinnamon, 1/8 tsp ginger, and a pinch of salt.
Mix well until everything is combined and smooth.
Assemble the Salad:
On a serving dish, arrange half of the arugula as the base.
Layer the apple slices over the arugula.
Sprinkle dried cranberries and the chopped pecans on top.
Drizzle 1-2 tbsp of the dressing over the salad.
Serve:
Toss gently if desired and enjoy your fresh and vibrant arugula salad!
