Homemade Cheddar Cheese Ruffle Chips

this is a super easy recipe with lots of flavor options.
You can use whatever ingredients you like to make the perfect chip

Recipe:
For the potatoes:
Ingredients:

6 each- small russet potatoes
1 TBSP- kosher salt
1/4 cup white vinegar
Oil for frying

Method:
Peel potatoes (this is optional, you may leave the skin on if desired).
Slice the potatoes with a mandolin, using the krinkle blade.
Place the sliced potatoes in cold water to remove the starches.
Add salt and vinegar to the water and let soak for 30 minutes.
Drain the potatoes and rinse with cold water.
Pat potatoes dry with a paper towel and let dry for 1 hour.
Heat oil to 300f and blanch potatoes in batches until lightly crisp and floating.
Remove potatoes and drain.
Heat oil to 360F and fry a second time in batches.
The potatoes should now brown and crisp.
Remove potatoes and sprinkle liberally with seasoning while they are still hot.

Recipe:
For the seasoning.
Ingredients:

1/2 cup- cheese crackers (we use cheese it)
1/4 cup- powdered cheese
1 tsp- kosher salt
2 tsp- chili powder

Method:
Using a food processor, grind all of the ingredients into a fine powder.
Sprinkle on chips as desired.
