Tiramisu Tart Recipe | HANSE

▶ ingredient (18cm tart pan)

+ tart dough
60g butter
30g powdered sugar
1 egg yolk
120g cake flour
10g cocoa powder

+ ganache
140g dark chocolate
110ml heavy cream
3g instant coffee

+ cream
150g mascarpone & cream cheese
40g sugar
150ml heavy cream

+ finish
15g cocoa powder

Recipe

1) tart dough - melt butter
2) mix with sugar powder and egg yolk
3) add weak flour and cocoa powder
4) when it is in one dough, wrap and put it in the fridge for 30min
5) Roll dough thinly, put it in tart pan
6) make some holes with fork, then cover it with paper foil, put on a weight and bake in preheated oven. (20min in 180c, then remove the weight and paper foil and bake for 5 more min)
7) when tart is totally cooled down, separate from the frame.

Ganache

8) boil heavy cream in a pot
9) when heavy cream boils, put off the heat and mix with chocolate
10) when chocolate is melt, mix with coffee and pour into the tart.
11) put it in the fridge for 30min

Cream

12) melt the cream cheese
13) mix with sugar
14) add heavy cream, whip until cream is solid
15) put it on the tart using spatula or bag
16) spread cocoa powder
