Limoncello is a delightful drink for before dinner, after dinner, or...anytime! It is a little pricey, though. In this video, I demonstrate how quick and easy it is to make a delicious limoncello liqueur with very few ingredients, a precision cooker, and just a couple of hours.
The recipe:
Zest of 10 lemons
4 cups vodka
Place zest and vodka in zipper bag; place in precision cooker water bath set at 135F. Let simmer 2 hours.
Meanwhile, combine 4 cups filtered water and 1 1/2 cups extra fine granulated sugar (such as berry sugar) in sauce pot. Heat on low, stirring, until sugar is fully dissolved. Let cool to room temperature.
After 2 hours cooking, pour zest and vodka through fine mesh strainer into bowl. Add most of simple syrup, taste test, and add more syrup, until you have the balance you want. This may vary based on your lemons and the vodka you have chosen.
Once combined and cooled, package. Oh, and enjoy!
