In Japan, it's the season when delicious-looking sweet potatoes are lined up in shops♪
This time I baked cookies using sweet potatoes.
I made a delicious cookie with plenty of butter 🌼

◆Ingredients
300g sweet potato
150g unsalted butter(room temperature)
100g sugar
1g salt
50g whole egg(room temperature)
200g cake flour

purple sweet potato powder,as needed
granulated sugar,as needed

egg white,as needed
black sesame,as needed

◇How to make
① Pour water into a heat-resistant container, cut the sweet potato into 1cm round slices, peel and soak in water.
② Drain the water, lightly wrap and heat in a microwave oven at 600W for 10 minutes.
(until the bamboo skewer goes through smoothly)
③Mash the sweet potato with a hand blender or a fork.
④ Add unsalted butter and mix.
⑤ Add sugar, salt and egg and mix.
⑥ Add cake flour and baking powder while sifting and mix until it becomes a lump.
⑦ Wrap the dough in plastic wrap and chill in the refrigerator for about 1 hour to harden.
⑧ Divide into halves, wrap in plastic wrap and chill in the freezer for about 30 minutes to harden.
⑨Mix granulated sugar and red sweet potato powder and sprinkle over the dough.
Cut into 1cm thick slices and shape into circles.
⑩ Put egg white and black sesame seeds in the center of the cookies and arrange them on a baking sheet lined with an oven sheet.
Bake in an oven preheated to 170°C for 15-18 minutes to complete.
