This Escovitch Fish is basically Fried Fish topped with a delicious pickle sauce, it sounds simple, but its so absolutely delicious!

Ingredients
2-3 pounds Red Snapper or any fish
Salt
Jerk Seasoning (or Seasoning of choice)
Cooking oil for frying Fish


PICKLE SAUCE
1 large carrot (julienne)
Scotch bonnet peppers
Bell peppers
1 onion
Pimento peppers (for flavor) if available
Pimento seeds (8-10)
2 gloves garlic
Fresh thyme
1/4 - 1/2 cup white vinegar
1 tbsp sugar
Pinch of salt and black to taste
